How do I create a text image without a background color?

This is called a transparent gif. Make a new image with a transparent background, and create the text. Go to File > Save For Web. Choose GIF as the format, and check the transparent box. You should see a preview and you might want to add a color Matte that matches the text color to make it blend smoother into the background. Save the file.
